Would be wonderful to be able to send to evernote and include the email date, to, from, cc, bc, , subject fields as a possible option - combine this with one of the other ideas of choosing notebook and adding tags and also including attachments of email, I'll also add here, it would be great to not have evernote open after doing this, and that, to me, is a perfect evernote experience!

Yeah, this is a real bummer, because it makes no sense to have an email "archived" without this essential data like DATE, TO, FROM etc.
