Package Tracking
I know there are dedicated package tracking apps out there, but to do it seamlessly and automatically they have to scan your mailbox for tracking numbers. I think it makes a lot of sense for it to be integrated into your email application. It's probably a tall order, but I think it would be awesome to have a dedicated section that detects email with tracking numbers in it and has a view designed specifically to show you their status. Maybe down where the To Do and Spam and Memo sections are. It wouldn't need to be too complex or have…

Would be great to be able to distinguish a 'resent snoozed' message from a new message.
Like is done in Mail Pilot. Mail Pilot is the buggiest app, but has the greatest workflow for email ever.

Add Todo bar on right side of app
Outlook for Windows has a todo bar on the right side of that app that contains flagged items. Something like this would be great for gmail stared items. It helps being able to see things at a glance.

Apple Watch complications
The title says it all: there are no "complications" on the first release of the iOS app which really is a shame.
I'd love to see a minimalist complication (ie: a small letter with a badge count for unread mail, in the way Microsoft did it with Outlook complications) which could be added to the watch faces.. It would fix the only negative aspect of an otherwise full-featured and killer apple watch app. You know what you have to do!

Email Context
It would be nice to be able to set respond by context to the email, see attachment.
For instance , lets say i send an email out my team, instead of me saying in the body of the email i need this done by END OF DAY, and they miss it , i can set a label or a flag that add a something to the email that stands out,
options like
Im expecting a response by end of day
I need this done ASAP
Please review I'm not expecting a reply things like that3 votes -
Snippets for (iOS) Airmail
Use abbreviations for pieces of text that you need often. Most iOS email apps have them but this essential feature seems to be missing.

Different signatures on Mac and iOS
It would be nice to be able to disable syncing of signatures between the Mac and iOS applications, so that different signatures can be used on each device for a single email account. Currently it is only possible to use the same signature for each email account on all synced devices.

Allow entering
The way my biz is setup I can only use POP servers and I need messages deleted from the server after 1 day. The only option is 7 days and I am now getting the same message downloaded twice as a result. I need a 1 day delete from server option (or selectable days)

Put Snooze Icon on Main Toolbar (and clean up the icons)
When viewing an email right now and you want to snooze an email you have to click the "…" icon, then choose snooze. Can you please put a snooze icon right on the toolbar, so it can be a one click option?
The best solution would be to give users the ability to choose what items go on the toolbar.
A simple clock icon would do, but I'd also like to see the icons get cleaned up. They aren't very good looking on my retina Mac.
I loved how MailBox did it. See the attached image. Simple and clean!

If current selected email is NOT in the inbox, Archive switches to move to Inbox.
Subject says it all... This would also be great in iOS also. (currently in iOS the archive changes to inbox but only if you are in the "All Mail" would be great if it did that everywhere if the email was not in the inbox.

Collective Signatures
Having a single signature database from which all accounts could draw would greatly simplify the use of signatures. As it stands now, I have to enter the same signature into multiple accounts, which means multiple times. It's getting a bit annoying having to do this again and again.

Enable editing via ResEdit
I'd love to see Airmail adopt the necessary APIs and tools to support ResEdit for greater UI customization. This would give me the ability to make the app look exactly how I want. This feature would be difficult to implement, as ResEdit was discontinued when OS9 was no longer supported, but with the proper emulation, I'm sure you could get it up and running- perhaps you could even include an OS9 emulator in Airmail itself! I'd love to use AppleWorks again, as I'm sure would everyone else too.

Trial Version would be great
Sure would be great to have a trial version to see if the product suits my needs. While it sounds amazing, I'm not a fan of paying for something I haven't had the chance to test drive. :D
