There is a naming convention problem in AirMail or Microsoft (take your pick)
AirMail calls things Labels, but really this is Exchange/Outlook Directories.
Exchange/Outlook Has Categories which everyone else calls "Labels" or "Tags".
On the Mac for Mac Mail I use a program called MailTags that actually adds the Categories when you Tag a message which means it properly shows up everywhere (Clients on Mac, Windows and Browser, in both local and in 365).
I agree it would be awesome to assign categories to emails.
This was one of the main reasons that I stopped using Airmail and went back to Outlook for Mac, even though I have had compatibility issues in the past. Not having the ability to assign categories for my email was a real setback.
