Make Airmail priority Mail app
Hi, currently it's not possible to make Airmail priority mail app on the iPhone.
If you click on an email address in safari you are automatically transferred to mail, for example.
That would help me a lot

Read the TOS. Then wait for the class-action.

Apple software engineers allowed us to remove stock apps after literally a decade of lamentation, either without realizing that we'd want to have default application choices in place of the stock or completely aware that the stock apps were still default in the UI to sort of push us back to the stock apps. Which...I mean the latter option is totally Apple's MO currently. Maybe in a decade, my guy.

That's not possible in iOS. You either have to use a browser that supports Airmail as a default for links (I'm unaware of any that do this?), or use share extensions - the most common method.

This is an iOS issue, not an airmail issue. It is not possible to set the default mail client on iOS.
